I didn‘t understand the pasteurisation - why would mixing in the sugar pasteurize the egg yolk? don‘t you have to heat the yolk up to 58 degree Celsius for some time to take effect?

A great recipe that I would try! But I don't agree that shortcut pastry is unhealthy when it is part of a dish like this one. Healthy is all about balance, moderation and the quality of the ingredients :)

1. Ο Americano coffee, γίνεται με εσπρέσο. 2. Η ζάχαρη δεν κάνει το αυγό "ασφαλές". Προσθέτει στην υφή και στην γεύση. Ο μόνος τρόπος να "ασφαλίσει" το αυγό, είναι το ψήσιμο. Σε τέτοιες περιπτώσεις, μέσω "μπεν - μαρι". Αλλιώς, κάντε τον σταυρό σας.
